Ham & Avocado Breakfast Tacos

I can certainly tell when I have particular ingredients in the house. Seems as though I bought avocados at the grocery store this week ๐Ÿ™‚ They are SO good! Tip: Buy them at Aldi’s..not kidding they were .39 and they ripened very well in about 48 hours.

Breakfast Burritos occur all the time in the world but I opted for the white corn tortilla shells the last grocery story visit because they are much lower carb than any tortilla. La Tiara are the ones I buy and there are only 4g of carbs/shell and 35 calories/shell. ย Given the alternatives…this isn’t too bad. However, I also made a completely Paleo version for my lovely husband who requested zero carb breakfast ๐Ÿ™‚

Maybe Im good at variations because I ALWAYS have to make variations to suit the people in the household but, its good to know most of the recipes I have can be amended to suit anyones taste.

Breakfast Tacos...Why not?

1. Cook your Taco Shells according to package directions. 2. Heat skillet over medium-low heat with olive oil. Add Onions and Peppers. Cook about 10 minutes then add the Ham and cook altogether until the Onions and Peppers are nicely caramelized (tender and brownish on the outside) 3. Heat another skillet and make scrambled eggs HOWEVER you like. Eggs are deeply personal so you make them however you usually like them. ๐Ÿ™‚ 4. Cut avocado in half and slide the "Meat" longitudinally then latitudinally to make small pieces within the skin. Then when you scoop it out its already cut! (just be careful you don't slice your hand under the avocado skin) 5. Assemble! Fill shells with eggs, then ham/pepper/onion mixture, then avocado, then salsa, then colby jack cheese. 6. Eat!
