Coconut Banana Griddle Cakes

There are several adaptations for Griddle Cakes put these are our standard version when we make them at home. I will tell you there is a big difference between using the unsweetened coconut flakes  vs. using the sweetened flakes (you mostly find in grocery stores..at least in the area I live in.) If you are not offended by the sugar content in the sweetened flakes (5g/2 Tbsp) you wont need to use any additional sweeteners because it is plenty sweet on its own and you can most likely use less egg depending on how you like yours (more or less eggy). Makes a great dessert OR breakfast!  If you are using the unsweetened flakes you will want to use a sweetener such as agave syrup or honey because unsweetened flakes are well….not sweet enough on their own to have the desired taste. If you dont want to add any sweetener at all…GO FOR IT 🙂

Super fast easy Paleo friendly breakfast! Just a few ingredients and you are on your way. Great add-ins to make a delicious dessert too.

1. Add coconut, egg, almond extract, agave OR honey,  and mashed banana to a small bowl. 2. Stir/Mix/Mash until completely combined. The flakes should be completely covered and the "batter" should look uniform (with flakes of course) 3. Over Medium to Medium-Low heat (depends on your stove and pan)  melt the coconut oil (melts quickly) 4. Form batter into 4 Griddle cakes about the size of the bottom of a coffee cup. Use your fork to push it together and gently mash together in pan to make the pancake shape. 5. Cook for 3-4 minutes on each side. Should be browned and center firm.
